La Avila is the highest part of the Las Mercedes farm, sitting high up at 1500 MASL. Lucia and Roberto Ortiz are old friends now, and we love their farm and their work. Besides producing award-winning coffee, they take care of their workers, who care for their farm by providing an onsite clinic with regular check-ups and transportation to the farm. In order to help with perfect picking, Lucia buys nail polish for the pickers that is the precise color of a perfectly ripe coffee cherry.

La Avila is the premier washed-processed coffee coming from Las Mercedes—matching the excellence of their honey-processed lots. This coffee exhibits a simple, malic acidity. So, instead of a loud fruit-note, it tastes more like apple, something crisp, classic. Its sweetness leans more sugary and nutty than fruity. We’re thrilled to offer you one of our favorite washed-processed coffees from Las Mercedes.
