Notes from our Green Buyer

Bella Vista’s “Txol Witz” (pronounced “shole-witz”) project in San Pedro Necta, Huehuetenango began in 2013. Starting with 7 producers over the years, it has grown to over 50 of the best producers of the region. Our old friend, Luis Pedro—of the Bella Vista Mill—and Byron Benavente work together with these producers to give their beautiful coffees access to stronger markets and better prices. This is why we get to bring their amazing work to you.  Enjoy!

Notes from our Roaster

Pointing out the nuances in coffee is something we get really excited about. The Huehuetenango (pronounced “way-way-ten-on-go”) region of Guatemala gives us some of our sweetest Central American offerings; however, it’s not just that they’re sweeter per se. It’s the kind of sweetness they present in the cup. Compared to Antigua, Huehue’s (as we like to call them) are generally distinguished by their juiciness—think citrus and red fruit instead of brown sugar. Txol Witz is the epitome of that distinction. Orange marmalade and plum are apt descriptors of the particular kind of sweetness you’ll notice in the cup profile.
