Notes from our Green Buyer

I started a long time ago with a singular focus on Single Origin coffee—coffees from one place with their own individual profile. I love the nuance of each coffee and comparing subtle differences between regional profiles or varietals. But I’d sometimes catch myself considering how 2 or 3 coffees might complement each other for something even better.  “A little acidity from this” or “balancing the body on that….” And so, we decided back then to make carefully considered blends a part of our repertoire. This one is a staff favorite. It’s a vibrant blend whose brightness brings warmth for the longing eventuality of a cool day in Texas. Enjoy!

Notes from our Roaster

This blend demonstrates a surprising harmony of flavors inherent in coffee and the season itself, as the interplay between the blend components pulls in flavors from all the angles. Starting with a sweet base from Las Mercedes in El Salvador (think maple), gently layering a unique nuttiness from a separate honey-processed micro-lot (think pecan) from Las Mercedes, and topping it with more tanginess that imparts a brighter note (think apricot) from Gachatha in Kenya, this blend affords autumnal flavor supplied by nothing but the coffee bean.
