Notes from our Green Buyer

The Refisa Washing Station, located in Nensebo Woreda, is owned and operated by Tariku Kare himself. He collects cherries from nearly 600 smallholder farmers in surrounding communities. He began sorting coffee cherries at a local cooperative when he was 15 years old. Then, he began processing coffees until he eventually managed that station. He has since created four other washing stations throughout Ethiopia, one of which is Refisa. His contribution to the local Ethiopian coffee market is significant: one of stability, opportunity, and accessibility.

Notes from our Roaster

Tariku Kare is a spectacular washed-processed Ethiopian, one we’ve been eager to roast for you! Among the several Ethiopian micro-lots we brought in this year, Tariku Kare is more  tangy than most of the others. Due to the intensity of its acidity, that “berry” note is much more complex, dazzling, and punchy – like mango and lime. This combination really sets it apart! It;s light bodied and the mouthfeel is delicate and floral; it’s usual citric note becomes more tea-like, like orange blossom.  This is a great example of how acidity contributes to complexity in your coffee. Without it, you’re usually left with a more singular, straight-forward flavor profile.
