Matte and his wife, Tsehaynesh Girma, run their 6 hectare farm in Doko, Bensa, which sits over 2200 MASL. They have 10 children, some of whom assist with the day-to-day farming operations, and together they have continued to improve and produce some of the best coffee in the already storied region of Sidama, Ethiopia. The coffee is anaerobically fermented and dried in the full fruit, producing a crisp, fruit-forward cup—and a fantastic example of why Ethiopia’s coffee is so special.

Do you remember Matte Matosa’s Natural-processed coffee? Now, take that wonderful raspberry and peach sweetness and translate it into this coffee’s iconic blueberry note. Take its honey-ed sweetness and do the same thing: develop it into a more intense sweetness, like bubble gum, with more of a floral aspect, like lavender. That’s what you can expect in this Anaerobic Natural. Matte Matosa demonstrates his workmanship in intensifying his already impressive foray into the world of “naturals.”
