Notes from our Green Buyer

Guayabo is a lot from the Las Mercedes farm in Usulután, El Salvador. We’ve worked with Roberto and Lucia for over a decade because of their commitment to great coffee and care for how they run their farm. Rainwater is collected from the mountain to use in their processing, they have established their own coffee tree nursery to rejuvenate older parts of the farm, and they staff a clinic on their farm to provide free healthcare to their workers. This lot is dried in the full coffee cherry on their patios, imparting fruit notes and body to the cup.

Notes from our Roaster

Here’s a classic natural-process from one of your favorite farms, Las Mercedes! Due to its processing method, it’s got a bright, citric juiciness alongside a loud, tropical sweetness. This coffee’s sweetness is pronounced, intense, and clean. Much like its washed-counterpart that we’ve offered years prior, the Guayabo micro-lot has a lot of balance—even as a natural! As loud as it is, the acidity doesn’t drown out its other aspects. Instead, they meld together wonderfully, creating a sweet, well-rounded cup.
