Maria Estervina Gutierrez owns and operates Tierra Fría, her 3 hectare farm in the Chiapas region of Mexico. When processing her coffees, she washes them (removes the fruit flesh) and allows them to ferment for 42 hours before drying them on patio beds. Look for notes of pear, caramel, and pastry.
