Las Palomas is located in San Pedro Necta, a small town in the Huehuetenango region of Guatemala; it is comprised of several small holder farmers. The coffee is handpicked and sorted by members of the group and taken to the Bella Vista Wet Mill. Our long-time friend and partner, Luis Pedro Zelaya, helped us acquire this coffee. He owns and operates Bella Vista, the processing mill from which we receive the majority of our Guatemalan coffees. It is through our partnership with Luis Pedro that we find remarkable coffees like Palomas. Look for bright notes of apple juice, maple syrup, and cream.
