Notes from our Roaster

Here’s the second release of our lactic-fermentation experiments with Luis Pedro. By now, you’ve probably enjoyed his washed-processed geisha varietal, which highlights subtlety over intensity. This, however, accomplishes just the opposite. Much like its experimental counterpart, the added lactic-fermentation eliminates any hint of subtlety! Instead, you get a loud, vibrant sweetness alongside a bright, citric acidity. Unlike your usual washed-processed geisha, the body, or mouth-feel, has more weight, which contributes to the overall impression of honey instead of the typical tea-like or floral quality.
