So many details for this coffee! Lucia Ortiz (Las Mercedes, El Salvador) loves variety, and this coffee shows off this love. Yellow Bourbon is a natural mutation of the storied Bourbon varietal. The cherries ripen to yellow (rather than red), and it presents a slightly different profile than its red sibling. The coffee is then anaerobically fermented to slow the processing down and develop more flavor in the cup. It’s as enjoyable to drink as it is to talk about, as it has lots of depth of fruit coming through in the cup. And it’s not just fun, but it’s also rare! So, we only have a few batches of it!

Las Mercedes has done it once again–this time, pairing unique varietal with unique processing to produce a truly spectacular coffee. This yellow bourbon varietal is probably one of your more interesting coffees coming out of our Small Batch repertoire. Due to the anaerobic fermentation, the acidity and sweetness can develop much more. This also enhances the body of the coffee into something a little heavier, like red wine. And yet, the depth of this coffee does not compromise its sweetness—you’ll taste a loud interplay between tropical and floral. With a coffee as complex as Lucia’s, we recommend brewing as a single-cup pour over (V60, Stagg, or Kalita). Try a finer grind, and aim for a total brew time of 3:30 to increase extraction and maximize flavor!
